There are many different types of fish cuts, and each one has its own unique flavour and texture. In this article, we will discuss each type of cut, how best to cook it and more. By the end of this article, you’ll have a better understanding of the different types of fish cuts. We’ll also give tips on how to know whether the fish you’re buying at a Sydney fish market is fresh or not. So, let’s get down to it!

Fillet

The fillet is the most popular type of fish cut. It’s a thin slice of meat that comes from the side of the fish. The fillet is usually cooked by baking, frying or grilling.

Butterfly Fillet

The butterfly fillet is a type of fillet that’s cut in half. This gives you two thin slices of meat, which are also perfect for baking, frying or grilling.

Sliced Fillet

The sliced fillet is a type of fillet that’s been cut into small pieces. This makes it perfect for stir-fries and other dishes.

Steak

The steak is another popular type of fish cut. It’s a thick slice of meat that comes from the centre of the fish. The steak can be cooked in a variety of ways, including, yet again, baking, frying and grilling.

Loin

The loin is a long, thin piece of meat that comes from the back of the fish. It can be cooked by baking, frying or grilling.

Rack

The rack is a cluster of meat that comes from the ribcage of the fish. Like most cuts on this list, the rack can be cooked through baking, frying and grilling.

Tail

The tail is a piece of meat that comes, as the name implies, from the backend of the fish. Also great for frying, baking and grilling, the tail cut may be a less popular type of cut, but still, it’s tasty and flavourful!

Head

The head is a thick piece of meat that comes, as the name suggests, from the front part of the fish. It is best prepared by boiling or steaming.

By understanding the different types of fish cuts, you’ll be able to cook your fish in a way that best suits your taste. Try out different cuts and cooking methods to find out what you like best. Rest assured that when cooked properly, there’s little chance you’ll have enough of fish dishes!

Now that you know about the different types of fish cuts, it’s important to learn how to identify fresh fish. Here are a few tips:

  • Look for shiny skin that’s free of blemishes.
  • The eyes should be clear and bright, and the gills should be red or pink.
  • The flesh should be firm and elastic.
  • Avoid fish that smells ‘fishy’ or ammonia-like.

If you’re not sure whether the fish is fresh or not, ask your grocery store associate for help. But really, with the abovementioned tips in mind, you’ll be able to select the perfect cut of fish for your next meal. Enjoy!
